ingredients
1 clove garlic, chopped1 tbsp fresh ginger, chopped
2 eggs
250g pre-cooked long grain rice, chilled
3 spring onion,finely chopped
2 tbsp vegetable oil
1tbsp sesame oil
salt & pepper
150g frozen peas, thawed & drained
50g cooked ham or chicken,diced OR prawns chopped coriander, to
taste
preparation method
1. heat a large frying pan until it is very hot add the garlic & ginger &cook briefly, stirring all the time.
2.add the COLD rice & seasoning &stir fry for about five minutes on high heat.
3.beat the eggs together & add the mixer to the pan.stir fry until the eggs have set
4.add the peas, ham , chicken or prawns to the rice.
5.at the end of the cooking mix the coriander. transfer to a warm
dish & serve hot or cool as a rice salad
